How to Select Lychee

Lychee fruit doesn't ripen after it's picked from the tree. It also begins to ferment, so it's essential that you choose only the freshest fruit and plan to use it within one week. Lychee is typically in season from late spring through early fall.
Whether buying lychee at a market or picking it from a tree, select fruit that is larger than one inch in diameter with bright, vibrantly colored skin. Most lychee skin is red, though some varieties are orange or slightly yellow with a pink hue.
To check for ripeness, gently press on the skin with your thumb. It should give a little. If it's too soft, it may be overripe. Ripe lychee will have a lush, floral smell. Signs of spoiled lychee include a brown husk or fruit that's cracked, secreting liquid, or smells fermented or off.
Don't Get Too Spicy
It can be easy to add too much spice to drinks that include hot peppers. Even if you enjoy all things hot and spicy, it's best to proceed with caution when adding jalapenos to this margarita. After all, you want to be able to taste the drink, and that's not possible if you burn your tongue.
Stick with the recommended number of pepper slices. The longer they sit in the pitcher, the more pepper flavor will be infused into the drink. To reduce the heat, remove as much of the white membrane as possible because this is where most of the pepper's capsaicin lies.
Also, be sure to remove the seeds as they can be quite annoying in a cocktail. They hold no spice and do little in the flavor department.
With careful attention to how you prep the pepper, The Late Night Lychee can be a well-balanced drink. Remember to wash your hands after handling jalapenos. Few things ruin a party faster than a little pepper burn.

Juicy Fruit: How To Make A Lychee Cake
- Prep Time: 35 minutes plus cooling time
- Cook Time: 45 minutes
- Level of Difficulty: Easy
- Serving Size: 10-12
- 1 3/4 cups canned lychees
- Scant 1 cup unsalted butter, softened, plus extra for greasing
- Heaping 1/2 cup caster sugar, plus 4 tablespoons
- 4 large eggs
- Heaping 1/2 cup self-raising flour
- 3 1/2 tablespoons ground almonds
- 1 teaspoon baking powder
- Scant 1/2 cup caster sugar
- 2 tablespoons water
- 3 tablespoons unsalted butter, diced
- 4 tablespoons double cream
- 1/2 pint double cream
- Scant 1 cup canned lychees, drained or fresh, peeled, pitted and halved
For the cake
Preheat the oven to 180°C (350ºF), gas mark 4. Grease 2 × 20 cm (8-inch) cake tins and line them with nonstick baking paper.
To make the cake, drain the canned lychees, reserving the syrup, then chop the fruit into small pieces and set aside.
Cream the butter and the 150 g (5 ½ ounces) sugar together with an electric whisk or a stand mixer fitted with a paddle attachment until light and fluffy . Add the eggs, 1 at a time, beating well after each addition. Add the dry ingredients and beat for 1 minute until thoroughly combined.
Fold the chopped lychees into the cake batter, then pour the mixture equally into the prepared tins. Bake for 25-30 minutes or until a skewer inserted into the centers of the cakes comes out clean. Leave the cakes to cool in the tins for 10 minutes, then turn out onto a wire rack and leave to cool completely.
Meanwhile, in a small saucepan, combine the reserved syrup from the lychees and add the remaining 4 tablespoons caster sugar. Bring to the boil, then simmer until the volume of the liquid has reduced by half. Remove from the heat and leave to cool.
When both the cakes and syrup are cool, brush the syrup over the cakes.
To make the caramel sauce, combine the caster sugar and measured water in a small saucepan and cook for 5-6 minutes until the mixture turns into a golden-brown caramel. Stir in the butter and cook for another couple of minutes. Now slowly add the cream, stirring continuously. Cook for a further 2 minutes, then set aside to cool.
To prepare the decoration, whisk the double cream in a bowl until soft peaks form. Add 2-3 tablespoons of the cooled caramel sauce and fold it in. To assemble, place the cake on a serving plate and spread half the flavored cream on it. Sit the second cake over the cream and spread the remainder of the flavored cream on top. Decorate with the lychees and drizzle with some of the remaining caramel sauce. This cake will keep, refrigerated, in an airtight container for up to 4 days. Let it sit at room temperature for 30 minutes before serving.
Rose Cupcake Recipe | For the cupcakes
Heat the oven to 180°C (160° fan) 350°F gas 4.
Place 12 cupcake cases in a bun tin.
Mix the pureed lychees with the milk and vanilla extract.
Cream the butter and sugar until soft and light.
Add the egg and egg whites and mix until blended.
Sift in the flour, baking powder and salt and stir until combined.
Add the lychee and milk mixture and mix until just combined.
Spoon the mixture into the paper cases and bake for 20-25 minutes until the tops are lightly golden and springy to the touch.
Leave to cool in the tins for 10 minutes, then place on a wire rack to cool completely.
