Altered ingredient amounts.I used equal rice crispies to chocolate in the end as 100g just didnt cover the amount of cereal stipulated in this recipe. So 300g Rice Crispies and 300g Chocolate-21 Aug 2010

I just didnt think the quantities were correct, expecially in relation to the photograph used, 1 part chocolate to 3 parts cereal just doesnt get that level of coverage.-21 Aug 2010

Dairy Free Rice Crispie Cakes

Honestly, I know you probably don't *need* a recipe for dairy free rice crispie cakes. It's pretty easy to figure out for yourself - although there is a recipe at the end of this post if you want a little guidance. Instead, I'm going to tell you how I use these little treats to quietly promote inclusion for kids with allergies.


Sculpting Rice Krispie Treats

There are some cake elements that are just better made by sculpting rice krispie treats. They can be wrapped around pvc pipe, molded into different shapes, and carved. If you want to make figures that are a bit too large to dry in time, you can mold them from the rice krispies.

They have a tendency to be to soft to work with if you use the butter in the recipe. The recipe off the Kellogg's cereal box minus the butter works well.

This is 40 regular sized marshmallows and 6 cups of rice krispies. If you need a firmer mixture for what you're doing, add more cereal.

Melt the marshmallows in the microwave and then stir the rice krispies in. Grease the pan or container you are placing them in and press them down firmly with your hands. If you need a smoother finish, you can put the rice krispies in the food processor and just pulse them quickly to break them up a little bit. Don't create a fine powder just crush them quickly. However, this will make the product heavier, so keep that in mind when supporting it.

If you are making a flat surface, make them the day before so they have time to set. It's best not to refrigerate them because they can get sticky. The outside surface will be bumpy, so before covering it with fondant, you'll want to give it a coating of white chocolate. On a flat sheet of rice krispie treats, you can easily spread the white chocolate smooth with a spatula.

On sculpted surfaces, after applying, you can use the warmth of your hands to smooth out the bumpy spots. While you can cover them with buttercream icing, it has a tendency to squish out. The white chocolate will make the piece weigh more, so be sure to have sufficient support. If you are sculpting them, do it while the mixture is still warm.

If it stiffens up on you, you can warm it up quickly in the microwave. To make the cereal stick to pvc pipe, spreading it with melted marshmallows first works well. The smooth surface will make the cereal treats come off if you don't add some "glue" to make them adhere. If you are making a wall for a structure, then you can spread the mixture out in a pan and then lay another pan on top of it, push down and compress it so it's all even. Working with this medium is sticky, so you can grease your hands with butter to prevent it from sticking to you. You can shape the cereal into forms right away or create blocks that you carve with a sharp knife into different shapes. It is lighter than cake the same size. Taller structures may need a center dowel to properly support them. When creating a figure, just remember that when it's covered with fondant, everything on it becomes larger - head, arms, legs. Try to make them smaller than you want them to be so that when they are covered, they will be the size you intended.


What You Need to Make these Easy Rice Krispie Cakes

For the original Golden Syrup treats you&rsquoll need:

  • Crispy rice cereal (brand name, off brand, doesn&rsquot matter)
  • Golden syrup (click here to get the recipe or buy it here)
  • Sugar (I used brown sugar for a bit more flavor but you can use white, raw, etc)
  • Butter
  • Vanilla extract
  • Any mix-ins or topping you want to add
  • Saucepan
  • Wooden spoon
  • Cake or brownie pan (I used a rectangular glass pan)
  • Knife to cut into squares

For the Golden Syrup Chocolate treats:

  • Crispy rice cereal (or chocolate Rice Krispies cereal)
  • Golden syrup (click here to get the recipe or buy it here)
  • Butter
  • Dark chocolate
  • Any mix-ins or topping you want to add
  • Saucepan
  • Wooden spoon
  • Cupcake liners
  • Muffin tin

You can make rice crispy cakes with just cereal and chocolate if you like &ndash the chocolate will still work it&rsquos magic to stick the rice crispy pieces together once it has been melted and left to set again. I like to add some butter and a little golden syrup to enhance the flavour, but this is entirely optional.

  • Pan/bowl for melting

What Chocolate Can I Use For Rice Krispy Cakes?

You can use whatever chocolate you have or can get hold of. I have used various different combinations of chocolate, dark, milk and white &ndash sometimes a mixture of two. The point is, don&rsquot worry if you can only get a certain type of chocolate, it&rsquos going to taste delicious anyway because, well it&rsquos chocolate!

Making Rice Crispy Cakes

Step 1 &ndash Melting The Chocolate

You can either melt the chocolate using the double boiler method, or use a microwave.

I used the double boiler method which involves putting the broken up chocolate into a bowl, together with the butter and golden syrup (if you are using it) and placing it over a pan with simmering water.

Resist the urge to dip a finger into the melted chocolate!

Step 2

Next you need to mix the rice krispies into the melted chocolate. For any chocolate lovers out there this will take all your restraint not to have a sneaky taste! Gently stir the cereal into the chocolate to make sure they are all coated. Try not to mix too vigorously or you might crush some of the cereal.

Step 3

You can either use a baking tin to make one large chocolate rice crispy cake, or divide the mixture up into cupcake cases. I done a mixture of both (mainly because I had run out of cases!)

Once all the mixture has been divided out you need to leave it to set &ndash just pop it in the fridge for a minimum of 30 minutes, until the chocolate mixture hardens up.

If you have used a baking tin you might need to leave it at room temperature for a short while to enable you to slice it up and remove it from the tin.

Recipe Summary

Brush 2 rimmed baking sheets evenly with oil. Place 28 rice pieces, cooking spray&ndashcoated sides down, on each oiled baking sheet. Bake in preheated oven until crisp and lightly golden, 14 to 20 minutes. Flip and top immediately.


Gluten-Free Tips

With some newly discovered gluten allergies in our family, we are always trying to be aware of gluten-free foods. If you are wondering if Rice Krispie treats are gluten-free, it depends on the brand of cereal. There is barley present in Kellogg’s brand, which contains gluten. Years ago there was a gluten free Kellogg’s cereal but it has since been discontinued. You can find generic brands of “crispy rice cereal” that are gluten-free. Malt-O-Meal is a brand that makes a gluten-free crispy rice cereal, and it works great in this recipe.


Recipe Summary

  • 9 ounces crispy rice cereal
  • 1 (11 ounce) package caramel bits (such as Kraft®)
  • ½ cup butter
  • 1 (16 ounce) package marshmallows

Prepare a baking dish and a large mixing bowl with non-stick cooking spray. Pour cereal into a large mixing bowl and set next to your stove.

Heat caramel bits and butter together in a large saucepan over low heat until both are melted and the mixture is smooth, about 5 minutes add marshmallows. Continue to cook the mixture, stirring regularly, until the marshmallows are melted and the mixture is smooth, about 5 minutes pour immediately into the middle of the cereal in the bowl and quickly stir to coat cereal completely.

Spread the coated cereal into the prepared baking dish. Spray the back of a spoon with cooking spray and use it to press the cereal into an even layer. Let cereal cool completely before cutting into squares.
