The eggplant meatballs with sauce they are the variant of my super tested and delicious eggplant meatballs, a second dish that is often in my kitchen during the summer season. To make the dish light, just boil the aubergines instead of frying them and use a low-fat cheese for the stringy heart: P The only dictate for the realization of this recipe is to make a rich "shoe" with bread at the end of the meal!
Although the recipe does not provide for it, for safety I recommend adding an egg to the dough, as turning them in the sauce I noticed that they were very delicate;)
How to make eggplant meatballs with sauce
Wash the aubergines and cut them into pieces.
In a pan, brown the garlic in the oil, then add the aubergines.
Now add parsley and salt and mix.
Once softened, put them in a colander and let them cool.
Then put them in a bowl with parmesan and breadcrumbs (if you want, even an egg).
Knead with your hands and form meatballs by placing a little smoked cheese in the center.
Prepare the sauce by putting a little oil, tomato sauce, salt and basil in a pan.
Stir and leave to flavor just a few minutes.
Add the aubergines, cover them with a little sauce and cook for about 10 minutes with the lid on.
Turn them over, gently, halfway through cooking.
Your eggplant meatballs with sauce are ready to be brought to the table.
