Recipe Baskets of phyllo pasta with swordfish of of 28-12-2012 [Updated on 24-05-2016]
Hello everyone, this morning I give you a recipe with phyllo pasta and swordfish that I experienced a few weeks ago. I had a roll of phyllo pasta to consume and some swordfish that I wanted to cook in a slightly different way than usual, so I made this appetizer getting inspired by what I had at home and by the memory of a filling with breadcrumbs, garlic and pine nuts which they prepare in Sicily to accompany various fish preparations. My guinea pigs were so enthusiastic about my little experiment, that they asked me to repeat the swordfish baskets for the New Year's Eve dinner and I will be happy to satisfy them :) So if you want to prepare a particular fish appetizer, you must definitely try my recipe and then please, tell me if you liked it and tell me the comments of your guests. How to make baskets with swordfish
First, prepare the baskets of phyllo dough. Take a first sheet and cut it into squares of about 10/12 cm
Overlap two squares of phyllo dough by placing them sideways and brushing a little oil between the two sheets
With these, line the aluminum cups brushed with a little oil trying to form a basket
Bake the phyllo pasta baskets in a preheated oven at 180 degrees for about 10 minutes. They will be ready when the edges are golden.
Now prepare the swordfish filling by mixing in a bowl the crumbled breadcrumbs, pine nuts, desalted capers, coarsely chopped almonds, finely chopped parsley and garlic, salt and pepper.
Cut the swordfish into small pieces and brown it in a pan with a drizzle of oil
Deglaze with the white wine then add the mix of bread and almonds.
Mix everything and cook for a few minutes.
Now stuff each basket of phyllo pasta with the swordfish and almond filling and serve
