Buondi, today I give you the recipe to prepare the quinoa with zucchini and pine nuts, a fresh and light but tasty and tasty dish, perfect to serve at a dinner with gluten intolerant guests or for an office lunch. A quick dish to make and very tasty, which you can enjoy hot, cold or lukewarm, yuppi! How to make quinoa with zucchini and pine nuts
Rinse the quinoa well under running water to remove all traces of the bitter saponins.
Then put it in a pot with water: for each cup of quinoa you will need to add 2 cups of water.
Cook for 15 minutes starting from boiling.
In the meantime, cut the washed and trimmed courgettes into chunks.
Chop the onion and sauté it in a pan with a drizzle of oil.
Also add the courgettes and brown them in a pan before adding salt.
Add the pine nuts and mint and cook for a few more minutes.
Turn off the heat, add the quinoa and a drizzle of oil and mix.
Serve the quinoa with zucchini and pine nuts hot, lukewarm or even cold.
