Zucchini and shrimp pasta recipe of 13-05-2007 [Updated on 12-06-2017]
Pasta with zucchini and shrimp is one of my favorite first courses, in addition to shrimp I also add shrimp to the recipe to give more flavor to the dish as the shrimps become almost invisible after cooking. When you prepare the zucchini and shrimp pasta you have to abound a little with the oil because the dish requires it. If you want you can add a sachet of cooking cream or cherry tomatoes to the sauce, it depends on personal taste, this is my latest version, divine: P
I also leave you the recipe for Risotto with zucchini and prawns, in case you want to opt for rice instead of pasta;)
How to make zucchini and shrimp pasta
Tick and wash the courgettes then slice them into very thin slices. Clean the prawns by removing the heads and shells.
Brown a clove of garlic in the oil in a fairly large non-stick pan.
Lift the garlic clove and add the zucchini.
As soon as the courgettes are cooked, add the peeled shrimps and shrimps. Adjust the courgette and shrimp sauce with salt and pepper and deglaze with the white wine and mix gently.
In the meantime, cook the pasta in plenty of salted water, drain it al dente and toss it in the pan together with the sauce for a couple of minutes before serving the zucchini and shrimp pasta on the plates.
Serve the zucchini and shrimp pasta with a sprinkle of pepper and a sprig of parsley.
