Lentils and cotechino are the indissoluble combination for the New Year's Eve dinner. On the last dinner of the year, that of New Year's Eve, bring the cotechino with lentils it is considered a symbol of good luck (or so they say). But do you know why? The lentils, very similar to coins, were already given as a gift in Roman times closed in a bag. In this way he wished, to those who received them, a lot of economic prosperity. The cotechino, just like the zampone, instead represents abundance and therefore the two ingredients are combined in a single course to wish only the best to the people we love, including ourselves of course.
Even though I don't like cotechino a little, every year I respect tradition and bring it to the table for my husband and father who love it! To amortize the cooking times I generally use one pre-cooked but you can safely buy the fresh one (which will be even better). Its preparation is not complicated at all, here I will explain how to cook fresh and not fresh cotechino.

How to make lentils and cotechino
Fill a pot of water 3/4 full and cook the cotechino with its package for about 20 minutes or following the times indicated on your package.
In a pan, fry the chopped carrots, celery and onion in oil.
Then add the cooked lentils and cook for about 5 minutes, adding salt and pepper and stirring.
Then lift the cotechino, open the package and remove its skin.
Cut it into slices on a cutting board.
Transfer the lentils to a serving dish and place the slices of cotechino in the center.
Bring your lentils and cotechino to the table.
