Hello, this focaccia was made with the surplus of sourdough, oh yes, by now I have got carried away with using the "waste" of the mother yeast and I am always looking for new recipes so as not to waste too much. The result of this mixture was excellent, in just 6 hours (which for preparations of this type, as you well know, are short times) I obtained a soft, light and fragrant focaccia. How to make focaccia with surplus sourdough

Break up the surplus of sourdough and put it in a bowl with water, work until it forms a froth.

Add the flour and sugar and start kneading the dough

Then add the salt and oil and work everything until you get a homogeneous mixture.

Transfer the dough to a well oiled bowl, cover with plastic wrap and let it rise for 3 hours in a warm place, the oven is perfect.

After that time, lay the dough in an oiled pan, roll out gently by pulling the dough with your hands and let it rise for another 3 hours

Now chop the cherry tomatoes, season with oil and salt and garnish the focaccia

Bake the focaccia with surplus sourdough in a preheated oven at 220 ° and cook for 15/20 minutes
