  • 1 teaspoon black peppercorns
  • 1 cassia stick (about 7cm long)
  • 5 whole cloves
  • 2 tablespoons coriander seeds
  • 2 teaspoons fenugreek seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon poppy seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon fennel seeds
  • 2 tablespoons turmeric
  • 1 teaspoon red chilli powder
  • 400 to 600g leg of lamb, trimmed and chopped
  • 1 teaspoon salt or to taste
  • 3 teaspoons vegetable oil
  • 1 teaspoon black mustard seeds
  • 10 to 12 fresh curry leaves
  • 1 onion, finely diced
  • 1 green chilli, finely chopped (2 for more heat)
  • 1 (2cm) piece ginger, grated
  • 2 cloves garlic, finely chopped
  • 1 (400g) tin plum tomatoes
  • 2 teaspoons tamarind pulp
  • 1 teaspoons hot chilli powder
  • 1 handful fresh coriander

  1. To create your Madras powder combine black peppercorns, cassia, cloves, coriander, fenugreek, mustard, poppy, cumin and fennel seeds, and grind to a fine powder with an electric grinder (blender or pestle and mortar). Stir in the turmeric and chilli powder.
  2. Place the lamb in a large bowl and rub with 2 or 3 tablespoons of Madras curry powder and the salt until all the meat is coated. Transfer the remaining powder into a well-sealed jar for another time.
  3. Heat the oil in a large cast iron pan until hot. Add the mustard seeds once they start to pop stir in the curry leaves and then the onions. Soften the onions until they turn dark brown (about 20 minutes) before adding the green chilli and ginger along with the finely chopped garlic. Keep stirring as this has a tendency to catch on the bottom of the pan. If it does catch add a splash of water.
  4. After a few minutes, add the tomatoes, tamarind and red chilli. Bring this to the boil then reduce the heat and simmer to create a thick masala sauce. Once it is shiny and thick add the lamb to the pan. Stir to coat the meat with the sauce.
  5. Reduce the heat to the lowest setting, cover and leave to cook very gently for 40 minutes to 1 hour until it is cooked through and no longer pink in the centre and the sauce has thickened. Serve hot garnished with fresh coriander.

Tip

If you haven’t got the time to make this in the evening, then you can slow cook it so it’s ready when you get in.

  • 3 to 4 tbsp. vegetable, canola, or sunflower cooking oil
  • 2 onions (chopped fine)
  • 1 kg. lamb (cut into 2" chunks)
  • 3 large tomatoes (chopped fine)
  • 1 cup thick coconut milk
  • Salt to taste

Heat a griddle or flat pan on medium heat. Add the whole spices (cumin, poppy and fennel seeds, bay leaf, cinnamon, cloves, peppercorns). Roast till spices get slightly darker and aromatic.

Remove from heat and keep aside for 10 minutes. Grind to a fine powder in a clean, dry coffee grinder.

Put the coconut slivers, garlic and ginger pastes, cumin and red chili powders, and the above-mixed spice powder into a food processor. Add 3 to 4 tablespoons of water and grind to a smooth paste.

Heat the cooking oil in a deep, heavy-bottomed pan on medium heat. Add the onion to it when hot. Fry till almost golden. Add the above masala (spice paste) and reduce heat slightly (just below medium heat). Fry, stirring often until the oil begins to separate from the spice paste. You may need to sprinkle water occasionally to keep the masala from burning and sticking to the pan.

Add the meat and fry till it starts to brown. Add the chopped tomatoes, coconut milk, and 1 cup of hot water. Season with salt to taste and stir well. Cook until the meat is soft. There should be a fair amount of thick gravy at this stage. If required, add hot water to maintain the amount of gravy as you cook.

Confusion and indecision: Two Lamb Madras recipes

Hubby has asked me to give a go at making lamb madras, which I've never done before and am confused about the vastly different ingredients used in two recipes I've found on the web. In addition to spices, one uses tomatoes and tamarind, and the other doesn't.. I realise everyone has their own recipes, but would have thought there would be more in common! Both claim to be "authentic", whatever that means!

Recipe 1: coriander, peppercorn, fennel, fenugreek, clove, red chillies, onion, ginger, garlic, fresh tomatoes, coconut, cilantro/coriander to garnish. This one has a sauce that clings to the meat.

Recipe 2: coriander seeds, cumin seeds, red chillies, fresh curry leaves, garlic, ginger, ground tumeric, ghee, onion, coconut milk, fennel seeds, cardamon pods, cinnamon, garam masala, tamarind. This one looks like it will be a bit saucier than the first.

I've never had it, but the husband - who loves it - can't recall the overall taste, but thinks it has tomatoes or was otherwise a deep red, so not much help!

Does anyone have any opinions? I'm one of these who end up with bland curries (despite using fresh whole herbs, etc.) and really don't want to end up with yet another dish that fails to "wow".
