Cut the dark chocolate into smaller pieces and place in a bowl.
Put the whipped cream in a saucepan on the fire and let it heat up. Careful: it doesn't have to boil at all! it must be hot, when it starts to make small air bubbles on the edge of the pan, take it off the heat and pour it over the chocolate cut into pieces.
Let it rest for 1 minute then, with the help of a wooden spoon or a spatula, chew until the chocolate is completely incorporated into the whipped cream and the cream becomes shiny.
Add to this composition 2 tablespoons of rum (alcohol) or brandy. If we don't have something like this in the house, it's no problem, the idea is that the rum will give it a very fine aroma.
Divide the cream into two or three, if we want to make truffles with different flavors, if not, we make them simple (if we divide the composition, we add in each cream the desired flavor)
I made it in two ways, simple and hazelnut.
So, let the cream cool for at least 2 hours in the fridge or put it on the balcony if it's cold outside, for me it was -2 ºC so it cooled relatively quickly. The cream must be strong so that we can handle the truffles.
When it has cooled completely, with the help of an ice cream tongs (or tongue as I did ..), we form small piles that we place on a tray lined with baking paper or aluminum. If you have ice cream tongs it would be ideal, you don't have to roll them so much in your hands!
We soak our hands in cold water for a minute and take each lump of cream that we roll in our hands quickly (the chocolate melts very quickly) until we form some balls. For the stuffed truffles, I used hazelnuts, put a hazelnut inside and then rolled them in my hands.
I used some disposable gloves so as not to scribble chocolate down to my ears, and from time to time I soaked my hands in cold water and then wiped myself with a paper towel.
The rolls thus formed are rolled in cocoa or ground hazelnuts and placed in candy wrappers, then put in the refrigerator.
They are extraordinarily good, they melt in your mouth!
